PORK
Most of the pork we use is Blythburgh Free Range
from Suffolk, although we do have to supplement some of the more
popular cuts from regular pigs. We also can obtain on a reasonably
regular basis a supply of Gloucestershire Old Spot pork from an
Essex farm. This rare breed of pig has a most wonderful flavour and
exquisite crackling, although it does have a heavier covering of fat
(hence the better flavour). Once again we are able to take forward
orders for this pork.
