LAMB
The large majority of the lamb we use is from
Warwickshire. We source it from a supplier near to Smithfield market
who buys lambs from throughout the country and sends us the best
available each week from whichever part of the country they may be.
We also have the opportunity to buy some Essex Saltmarsh Lamb from a
farm near to the Cattawade estuary. This is, naturally, more
difficult to obtain but we are able to take advance orders from you
if required. All the lamb is matured for at least a week before we
cut and prepare it for sale.
